Recipe: Appetizing Ada Pradhaman

Ada Pradhaman. Ada Pradhaman is another classic dessert or traditional payasam of Kerala. Payasam especially Ada payasam, be it palada payasam (prepared with rice ada, milk and sugar) or ada pradhaman (prepared with jaggery, rice ada and coconut milk) is especially popular during the festival of Onam. It is an integral part of Onam Sadhya Menu.

Ingredients of Ada Pradhaman

  1. Prepare 100 g of Rice ada.
  2. It's 1/4 cup of Jaggery.
  3. It's 1 cup of coconut milk Thin.
  4. You need 1/2 cup of coconut milk Thick.
  5. Prepare 2 tbsps of Coconut bits.
  6. Prepare 1/4 tsp of Cardamom powder.
  7. Prepare 2 tbsps of Ghee.
  8. It's 2 cups of Water.

Originating from Southern India, this is a lip-smacking dessert recipe that is quite famous all across the country. Ada Pradhaman is a dessert similar to Payasam usually prepared during Onam or Vishu.

Ada Pradhaman step by step

  1. Add water into ada and cook it. Then drain it out and wash in cold water.This is done to prevent the ada from sticking to each other. Then keep aside..
  2. Make jaggery syrup and strain it to remove impurities if any..
  3. In a pan add the jaggery syrup and cooked ada and mix it well and cook for 10 minutes..
  4. Add 1 tbsp of ghee in between and mix well..
  5. In this add thin coconut milk and allow to boil..
  6. Once it thickens, add thick coconut milk and cardamom powder and switch off the flame..
  7. Fry coconut bits in ghee and garnish the Pradhaman with it..

It is prepared with Ada (Rice flakes), coconut milk, jaggery and it is must recipe to end the Onam Sadhya (feast) menu. Instead of jaggery and coconut milk, can use cow's milk and sugar. that we called as palada pradhaman. but that preparation is little bit different from ada pradhaman. if you will make ada with rice powder in traditional way, that will be more delicious. The ada refers to the pieces of rice batter and the pradhaman, the sweet coconut milk in which they are put. The word pradhaman also means the first one, perhaps this is also one of the reasons why ada pradhaman is called the King of Payasam. Ada pradhaman is made using simple ingredient like coconut milk, jaggery and readymade rice ada.
