Ingredients of Chole bhature
- You need 400 gm of Chickpea/white channa.
- Prepare 4 pieces of Gooseberry dried/sukha amla.
- It's 1/4 tsp of Soda.
- You need 1 of medium Onion paste.
- It's 2 of medium Tomatoes puree.
- Prepare 1 tsp of Garlic paste/lehsun.
- You need 1 tsp of Ginger paste/adrak.
- You need 1 tsp of Cumin seeds/jeera.
- Prepare To taste of Salt.
- Prepare 1 tsp of Red chill Powder/lal mirch.
- It's 1 tsp of Coriander powder/dhaniya.
- Prepare 1 1/2 tsp of Chole masala.
- Prepare 1 tsp of Carom seeds/ajwain.
- You need 2-3 of Green chilli/hari mirch.
- It's 1 of Black cardamom/badi elaichi.
- You need 1 inch of Cinnamon stick/dalchinni.
- It's 1 of Bay leaf/tej Patta.
- You need 2 of Clove/long.
- You need 3-4 of Black pepper/Kali mirch.
- You need 4 tbsp of Oil.
- It's of for garnish.
- Prepare 2 tsp of Fresh coriander leaves.
- Prepare 1 of Onion chopped.
- You need of bhature ingredients.
- You need 2 1/2 cup of Maida/All purpose flour.
- You need 2 tsp of Sugar.
- It's 1/2 tsp of Baking soda.
- Prepare 1 tsp of Baking powder.
- Prepare 1 tsp of Salt.
- You need 5 tbsp of Oil.
- It's 5 tbsp of Yogurt / Dahi.
- Prepare as needed of Oil to deep fry the bhatura.
Chole bhature step by step
- Chickpea Boiling Method.
- Rinse and soaked white chanaovernight..
- Drain water and transfer to a pressure cooker..
- Add water, Gooseberry/amla, Black cardamom/badi elaichi, cinnamon stick/dalchinni, soda and place over medium flame..
- After 2 whistle simmer for 30 minutes..
- Once done drain chickpea water and reserved the water in a bowl..
- Chickpea tadka.
- Heat a wok over medium flame and add oil..
- Add cumin seeds,bayleaf,clove, black pepper and saute..
- Now add onion paste, ginger paste,garlic paste and saute for 3 - 4 minutes over low flame..
- Once onion turn brown add red chilli powder, coriander powder, chole masala, salt and saute until oil start leaving sides..
- At this stage add tomatoes puree and cook for another 5 to 10 minutes or until it starts leaving sides..
- Now add Carom seeds/ajwain and slit green chilli and saute..
- Lastly add boiled chickpeas along with 3 cups of the reserved water and cook..
- Bring to a boil till the gravy has very little water..
- Garnish with coriander leaves and chopped onions..
- Bhatura method.
- In a large plate pour maida..
- Add sugar, baking soda, baking powder, salt, oil and yogurt..
- Using your hand start kneading to form soft dough and add water as required to form a soft dough..
- Once done grease the dough with oil. Place it in a bowl and cover the dough with a samp cloth and keep aside for 2.5 hours..
- After 2.5 hours the dough is ready to roll. Divide the dough into equal portions approximately 14 to 15 portions..
- Take 1 portion at a time and start rolling the dough using a rolling pin..
- In a frying pan, heat the oil on high flame..
- Deep fry them until they are golden in colour. Keep pressing and flipping the bhatura lightly..
