Ingredients of Chole Bhature
- Prepare 2 cup of chickpeas(chole).
- It's 4 of Tomato.
- It's 4 of Black pepper.
- It's 2 of clove.
- It's 2 tsp of chole masala.
- Prepare 1 tsp of Coarinder powder.
- It's 1/2 tsp of garam masala.
- Prepare 1/2 tsp of turmeric powder.
- Prepare 1/2 tsp of red chilli powder.
- Prepare 1/2 tsp of Kashmiri mirch powder.
- It's 1/2 tsp of cumin seeds.
- It's 1 pinch of asafoetida.
- You need 2 cup of maida/all purpose flour(for bhature).
- It's 1 cup of curd.
- Prepare as needed of Water.
- Prepare as needed of Oil to deep frying.
- Prepare 2 of Green chilli.
- It's 1 inch of Ginger.
Chole Bhature instructions
- Add the curd and maida mix well..
- Add water in intervals and knead to a good guy and soft dough..
- Make medium sized balls from the dough. Apply oil while rolling and roll into an oval or elongated shape..
- Drop the bhatura in hot oil and it will start puffing within a minute..
- When light golden, remove the bhatura and drain on paper towels to remove excess oil..
- Rinse the white chickpeas (chole or chana) a couple of times in water. Then soak the chickpeas in enough water overnight or for 7 to 8 hours..
- Next day drain all the water and cook the chole with water+salt in a pressure cooker or a pot..
- You can also add a pinch or two of baking soda while cooking the chole..
- Drain the water and keep the chole aside..
- In a grinder or blender, 4 medium sized chopped tomatoes, 1 inch chopped ginger 1 chopped green chilli..
- Grind to a fine paste..
- No need to add water while making the paste as the juice of the tomatoes will help in making the paste..
- Keep the paste aside..
- Heat 2 to 3 tablespoons oil in a pan or kadai..
- Add the whole garam masala (spices) - 1 teaspoon cumin seeds, 1 large tej patta, 2 inch cinnamon, cloves, green cardamom and black pepper..
- Next add all the dry spice powders - teaspoon turmeric powder (haldi), teaspoon red chilli powder, teaspoon coriander powder (dhania powder), pinch asafoetida (optional) and or teaspoon dry mango powder.
- Mix very well. Now add the cooked chole and stir..
- Serve hot chole and bhature and enjoy..
