Ingredients of Chole Bhature

  1. You need of For Bhature.
  2. It's of Refined flour (maida) - 2 and 1/2 cups.
  3. It's 1/2 cup of Yogurt.
  4. You need 1/2 tsp of Baking powder.
  5. It's 1 tsp of Salt.
  6. You need 2 tbsp of Oil.
  7. Prepare 2 tsp of Sugar.
  8. Prepare of For Chole.
  9. It's 2 cups of Chickpeas.
  10. Prepare 5-6 of Green Cardamom pods.
  11. Prepare 2 of Cinnamon sticks.
  12. You need to taste of Salt.
  13. Prepare 1 cup of chopped Onions.
  14. You need 1 cup of pureed Tomatoes.
  15. Prepare 3-4 of Cloves.
  16. You need 2 tsp of Ginger and Garlic paste.
  17. You need 1 tsp of Red chilli powder.
  18. Prepare 3 tsp of Chole masala.
  19. Prepare 5 cups of Water.
  20. You need 2 tbsp of Ghee.

Chole Bhature instructions

  1. For bhature take flour, baking powder, sugar, oil and salt in a bowl..
  2. Add yoghurt and mix well..
  3. Add  a cup of warm water and mix gradually to make a soft dough..
  4. Cover the dough with a wet cloth and keep it aside for 2 hours..
  5. For chole soak the chickpeas overnight in enough water to cover them..
  6. In a pressure cooker boil the soaked chickpeas with water and some salt..
  7. Pressure cook at high flame till you get 1-2 whistles and then lower the flame to medium and let the chickpeas cook for another 10-12 minutes..
  8. In a wok, heat 2 tsp of oil and then add whole garam masalas..
  9. Add onions and fry till the raw smell goes away and they are light golden brown in colour..
  10. Add ginger-garlic paste and cook for 3-4 minutes till the smell of ginger-garlic goes away..
  11. Add the garam masala, red chilli powder and mix for 1-2 minutes..
  12. Now add the tomato puree, stir and let it cook for 12-15 minutes on medium-low flame..
  13. Add the boiled chickpeas, chole masala and salt and stir till all the chickpeas are coated with the spices..
  14. Add water and chat masala, cover the pan and let it simmer at medium flame for 20 minutes..
  15. The gravy will thicken after 20 minutes so add water accordingly..
  16. Sprinkle somekasuri methi and garnish with chopped coriander leaves, onion rings and chopped ginger..
  17. Now divide bhatura dough into equal portions and them into balls..
  18. Roll out like chapati with rolling pin..
  19. Heat oil in a kadai and deep fry the bhaturas on high heat till light brown on both sides..

  21. Serve hot chole bhature with onion rings, lemon slices and some pickles..
