Ingredients of Sheer korma / sheer khurma

  1. It's 2 litres of Milk.
  2. It's 110 gms of Sugar (may vary according to sweetness preferred).
  3. You need 100 gms of vermicelli Fine.
  4. It's 25 - 30 of Almonds (blanched,peeled and slivered).
  5. Prepare 25 - 30 of Pistachios ( blanched, peeled and slivered).
  6. It's 4 - 5 of Dates (chopped).
  7. It's 3 tbsps of Chironji (charoli nuts) (soaked and skinned removed).
  8. Prepare 100 ml of Ghee.
  9. You need ¾ tsp of Cardamom powder.
  10. It's 2 - 3 of cardamom Green.
  11. Prepare 2 - 3 of Cloves.
  12. Prepare Pinch of strands of Saffron.

Sheer khurma is a delicious and rich Mughlai dessert made for ramadan. It is made with fine vermicelli, dates, milk, chiroli seeds and nuts. Vermicelli: To make sheer khurma fine vermicelli or thin seviyan is used. There are pre-roasted and unroasted vermicelli available in the market.

Sheer korma / sheer khurma step by step

  1. In a pan, heat 75ml ghee, sauté slivered almonds, pistas, chirongi and dates till golden(but not burnt), remove and keep it aside.
  2. In same pan, roast vermicelli till golden (but not burnt), keep it aside.
  3. In heavy bottom pan, bring the milk to boil.
  4. Once start boiling, add cardamom powder and simmer on low heat till milk turns pink in color.
  5. Add sugar, saffron and stir till sugar dissolves.
  6. Add roasted vermicelli, and dry fruits and simmer for another 8-10 minutes, stir occasionally to avoid burning.
  7. In a small pan, heat the remaining ghee, add green cardamom and cloves and fry for 30 seconds.
  8. Pour the tempering over the prepared sheer kurma.
  9. Dish out, garnish with few saffron strands and serve hot.
