Ingredients of Amritsari Chole Bhature

  1. You need of For Chole :-.
  2. You need 1 cup of chickpea / Chole soaked overnight.
  3. It's 4 tbsp of oil.
  4. It's 1 of bay leaf.
  5. Prepare 1" of cinnamon stick.
  6. It's 1/2 tsp of cumin seeds.
  7. Prepare 1 of onion finely chopped.
  8. It's 1 tsp of ginger garlic paste.
  9. Prepare 1 tbsp of Kashmiri chilli powder.
  10. It's 1/2 tsp of turmeric powder.
  11. You need 1 tsp of coriander powder.
  12. It's 1/2 tsp of cinnamon powder.
  13. Prepare 1/2 tsp of cumin powder.
  14. Prepare 3/4 tsp of aamchur powder / dry-mango powder.
  15. You need to taste of Salt.
  16. Prepare 1/2 tsp of garam masala.
  17. You need 2 cups of water.
  18. It's 2 tsp of coriander leaves finely chopped.

  20. It's 2 & 1/2 cup of maida / all purpose flour / plain flour for dusting.
  21. Prepare 1 tbsp of rava / semolina.
  22. It's to taste of Salt.

  25. It's 1/4 tsp of baking soda / cooking soda.
  26. Prepare 1 cup of curd / yogurt.
  27. Prepare 2 tsp +more of oil for deep frying.

Amritsari Chole Bhature step by step

  1. To make Chole firstly in a cooker heat oil.
  2. Furthermore,saute bay leaf, cinnamon stick & cumin seeds till they turn aromat.
  3. Add finely chopped onions & ginger- garlic paste. Saute till it turns golden brown.
  4. Further add chilli powder, turmeric, coriander powder, cumins powder, aamchur powder, garam masala & salt. Saute for a minute.
  5. Then add soaked chickpea. Make sure to soak chickpea overnight.
  6. Followed by 2 cups of water.
  7. Further, give a good mix. And check the seasonings.
  8. Pressure cook for 7-8 whistles on medium flame.
  9. Allow the pressure to release by itself before opening cooker.
  10. Mix well & garnish coriander leaves your Chole is ready.
  11. To make bhature firstly, in a large mixing bowl take maida.
  12. To that add rava, sugar & salt.
  13. Also add baking powder and baking soda & mix it well.
  14. Furthermore, add oil & rub with the flour.
  15. Also add curd & start to knead dough.
  16. Knead & puch the dough well for at least 5 minutes.
  17. Further, grease the dough with oil.
  18. Cover with moist cloth & rest for at least 2 hours.
  19. Further, roll & get to a long shape. Pinch the dough into medium sized balls.
  20. Then make balls between your palms.
  21. Finally, roll the dough evenly into circles using rolling pin. Roll neither too thin nor thick.
  22. Now heat oil in a deep frying pan or kadhai. When the oil is sufficiently hot, add one bhatura.
  23. And, press with the spoon to puff up.
  24. Also once they begin to puff, splash oil over the bhatura till they puff completely.
  25. Flip over & fry the bhatura till golden brown all over.
  26. Then drain the bhatura into tissue paper to remove excess oil, fry oil bhatura in the same way.....your bhature is ready.
  27. Finally serve bhatura with Chole curry.....
