- You need of For Chole :-.
- You need 1 cup of chickpea / Chole soaked overnight.
- It's 4 tbsp of oil.
- It's 1 of bay leaf.
- Prepare 1" of cinnamon stick.
- It's 1/2 tsp of cumin seeds.
- Prepare 1 of onion finely chopped.
- It's 1 tsp of ginger garlic paste.
- Prepare 1 tbsp of Kashmiri chilli powder.
- It's 1/2 tsp of turmeric powder.
- You need 1 tsp of coriander powder.
- It's 1/2 tsp of cinnamon powder.
- Prepare 1/2 tsp of cumin powder.
- Prepare 3/4 tsp of aamchur powder / dry-mango powder.
- You need to taste of Salt.
- Prepare 1/2 tsp of garam masala.
- You need 2 cups of water.
- It's 2 tsp of coriander leaves finely chopped.
- Prepare of For bhature :-.
- It's 2 & 1/2 cup of maida / all purpose flour / plain flour for dusting.
- Prepare 1 tbsp of rava / semolina.
- It's to taste of Salt.
- You need 1 tsp of sugar.
- You need 1/2 tsp of baking powder.
- It's 1/4 tsp of baking soda / cooking soda.
- Prepare 1 cup of curd / yogurt.
- Prepare 2 tsp +more of oil for deep frying.
Amritsari Chole Bhature step by step
- To make Chole firstly in a cooker heat oil.
- Furthermore,saute bay leaf, cinnamon stick & cumin seeds till they turn aromat.
- Add finely chopped onions & ginger- garlic paste. Saute till it turns golden brown.
- Further add chilli powder, turmeric, coriander powder, cumins powder, aamchur powder, garam masala & salt. Saute for a minute.
- Then add soaked chickpea. Make sure to soak chickpea overnight.
- Followed by 2 cups of water.
- Further, give a good mix. And check the seasonings.
- Pressure cook for 7-8 whistles on medium flame.
- Allow the pressure to release by itself before opening cooker.
- Mix well & garnish coriander leaves your Chole is ready.
- To make bhature firstly, in a large mixing bowl take maida.
- To that add rava, sugar & salt.
- Also add baking powder and baking soda & mix it well.
- Furthermore, add oil & rub with the flour.
- Also add curd & start to knead dough.
- Knead & puch the dough well for at least 5 minutes.
- Further, grease the dough with oil.
- Cover with moist cloth & rest for at least 2 hours.
- Further, roll & get to a long shape. Pinch the dough into medium sized balls.
- Then make balls between your palms.
- Finally, roll the dough evenly into circles using rolling pin. Roll neither too thin nor thick.
- Now heat oil in a deep frying pan or kadhai. When the oil is sufficiently hot, add one bhatura.
- And, press with the spoon to puff up.
- Also once they begin to puff, splash oil over the bhatura till they puff completely.
- Flip over & fry the bhatura till golden brown all over.
- Then drain the bhatura into tissue paper to remove excess oil, fry oil bhatura in the same way.....your bhature is ready.
- Finally serve bhatura with Chole curry.....
