Chhole bhature instructions
- Take flour and add oil,baking powder,baking soda, salt,sugar,oil and curd to it..
- Knead a dough,add little water if required..
- Oil the dough and cover and keep for at least 2 hours..
- Take a small portion of dough and roll into bhatura..
- Heat oil in a wok and deep fry the bhatura till golden brown on both sides..
- Drain on an absorbent paper. Similarly make all the bhaturas..
- For the chhole,soak chickpeas overnight in water and boil them with water and little salt next morning..
- In a pressure cooker,heat ghee and add bay leaf and cinnamon stick..
- Add chopped onions and saute till golden brown..
- Add ginger garlic paste and saute for a minute till the raw smell goes off..
- Add water to stop cooking..
- Add salt and other dry spices..
- Mix well so that all spices are incorporated well and simmer till it starts leaving oil..
- Add boiled chickpeas and add more water to make gravy..
- Pressure cook for 3-4 whistles and then switch off the gas. Serve hot with bhaturas and salad..
