Chhole bhature instructions

  1. Take flour and add oil,baking powder,baking soda, salt,sugar,oil and curd to it..
  2. Knead a dough,add little water if required..
  3. Oil the dough and cover and keep for at least 2 hours..
  4. Take a small portion of dough and roll into bhatura..
  5. Heat oil in a wok and deep fry the bhatura till golden brown on both sides..
  6. Drain on an absorbent paper. Similarly make all the bhaturas..
  7. For the chhole,soak chickpeas overnight in water and boil them with water and little salt next morning..
  8. In a pressure cooker,heat ghee and add bay leaf and cinnamon stick..
  9. Add chopped onions and saute till golden brown..
  10. Add ginger garlic paste and saute for a minute till the raw smell goes off..
  11. Add water to stop cooking..
  12. Add salt and other dry spices..
  13. Mix well so that all spices are incorporated well and simmer till it starts leaving oil..
  14. Add boiled chickpeas and add more water to make gravy..
