Ingredients of Choley Bhature

  1. Prepare 2 cup of gram white flour (maida).
  2. It's 2 tbsp of semolina (sooji).
  3. It's 1/2 kg of white choley.
  4. You need 1 packet of eno or Soda water.
  5. Prepare 1 pinch of friut salt.
  6. Prepare 1 of chopped onion.
  7. Prepare 2 of grinded tomatoes.
  8. You need 1 tsp of ginger garlic paste.
  9. Prepare to taste of salt.
  10. Prepare 1 tsp of red chilli powder.
  11. Prepare 1 tsp of chana masala.
  12. Prepare 1/2 tsp of coriander powder.
  13. It's 1/2 tsp of garam masala.
  14. It's 1/2 tsp of kasuri metthi.
  15. It's 1 of bay leaf.
  16. Prepare 1 of black cardamon.
  17. Prepare 1 tbsp of tea leaves.

Choley Bhature step by step

  1. Take a pan,pour 2 cup of water in it with 1 tbsp of tea leaves, Boil for 2 minute's& with the help of stainer,stain the tea leaves..
  2. Soak the channas in that water for overnight with black cardamom,if want can add more plain water according to need.
  3. Take a bowl,add white flour, semolina & a pinch of salt..
  4. Knead it with soda water..
  5. Make a smooth dough of it..
  6. Cover it with wet cotton cloth for overnight &keep it in the refrigerator..
  7. Next day,boil channas in the cooker for 20 minutes with a pinch of fruit salt..
  8. Take a pan,pour 2 tsp of oil in it with bay leaf..
  9. When it turns black,add chopped onions,cook till they become brown in colour..
  10. Now add salt,red chilli powder,ginger garlic paste,corander powder,chana masala & saute for few seconds..
  11. Add grinded tomatoes..
  12. Cook till oil spreads from corners..
  13. After 20 minutes,switch off the flame of cooker & let it cool down..
  14. Put the cooked masala in the boiled channas & mix well.cook till all the water is absorbed..
  15. For bhature,take out the dough & make small balls out of it..
  16. With the help of rolling pin,give the oval shape of balls on the rolling board..
  17. Heat the oil in a kadhai & deep fry the bhaturey..
  18. Take them out & put on the tissue paper to remove excess oil..
  19. Garnish channe with kasuri methi,garam masala & coriander leaves.Serve hot with bhaturey..
