Ingredients of Chole Bhature

  1. Prepare of For Bhatura.
  2. You need 2 Cups of All Purpose Flour (Maida).
  3. It's 1-2 tsp of Baking Soda.
  4. Prepare 2-3 tsp of Semolina (Rava).
  5. You need To Taste of Salt.
  6. You need 1/2 tsp of Sugar.
  7. It's 1/2 tsp of Curd (Dahi).
  8. It's As needed of Oil - For Deep Frying.
  9. It's of For Chole (Chick Peas Masala).
  10. Prepare 1-2 Cups of Chick Peas (Safed Chana).
  11. It's 1 of Chopped Onion -.
  12. You need 1-2 of Tomato.
  13. Prepare 2 of Green Chillies.
  14. It's 2 Tbsp of Ginger Garlic.
  15. Prepare 2 Tbsp of Cumin Seeds.
  16. It's 1/4 tsp of Turmeric Powder.
  17. Prepare 1-2 tsp of Red Chilli Powder.
  18. It's 1 Tbsp of Chole Masala Powder.
  19. You need of As Per Requirement Fresh Coriander.
  20. You need 1 of Bay Leaf.
  21. It's 1 of Kashmiri Red Dry Chilli.
  22. Prepare To Taste of Salt.

Chole Bhature instructions

  1. In a bowl mix together all purpose flour(maida), semolina (rava), salt, sugar and baking powder. Make a slightly stiff dough like we make for a poori. Note : (Don't Add Water As Curd Already Contains Water).
  2. Cover the dough and keep it aside for rising for 1 hour or more. After 1 hour the bhatiya dough will be ready. Knead the dough again and make small sized balls out of it.
  3. Dust the dough ball with all purpose flour (maida) and roll it out into thin circular shaped puri.
  4. Heat Oil In Kadai and maida puri, fry both sides of puri until golden brown. Once fried remove them from oil and serve with hot chole. Note : (Don't Add Too Many Maida Puri In Kadai At One Time).
  5. For Making Chole: Soak Chick Peas a night before (Wash And Soak Chick Peas Overnight).
  6. Add Chick Peas to a pressure cooker then add salt and water. Pressure cook them for nearly 15 minutes or until chick peas (chole) are soft and tender. Keep Aside.
  7. In a Grinder add ginger, garlic, tomatoes, fresh coriander leaves, green chillies and grind it into a fine paste.
  8. Heat oil our ghee in a pan and add bay leaf, cumin seeds, chopped onion. Once there onion turns golden brown in colour add the grinded paste.
  9. Now add turmeric powder, red chilli powder, chole masala, salt to taste aage saute all the contents in pan for 2 minutes..
  10. Then add cooked chick peas(chole) and mix well.
  11. Add some water and stir well for 5 to 10 minutes.
