Veg Biryani step by step
- For steamed rice, wash and drain the rice and soak for 30 minutes before cooking.
- Now add 6 to 7 cup water in a large vessel and add whole dry spices potil and bring it to boil, now add rice.
- Boil the rice till semi cooked, then drain it and remove the potli and keep aside.
- For vegetable masala gravy, heat 3 tbsp oil and butter mix in a deep pan, fry the paneer cubed and cashew nuts and raisin, keep aside,.
- Now add shajeera, clove, peppercorn, star anise, cinnamon, green cardamom, bay leaves and then saute for few seconds.
- Add sliced onion, green chilli and stir it till golden brown.
- Add all vegetables, salt, turmeric powder and saute, add tomato and wait for melt.
- Now add kashmir red chilli powder, ginger and garlic paste and saute well.
- Now add cumin powder, coriander powder, garam masala, and biryani masala and saute again.
- Add fried paneer, cashew nuts and raisin, mix well.
- Add 1/4 cup of water and then mix well, cover it for 5 to 7 minutes or till almost cooked, but not fully cooked, while cooking check occasionally.
- Add whisked curd and chopped coriander leaves and mix well, stir it for few minutes and keep aside.
- Process for biryani......In heavy deep vessel heat the oil, spread 1/3 part of steamed rice, then spread half quantity of vegetable gravy, again spread half of rice from remaining rice and sprinkle some chopped coriander leaves, now again spread leftover vegetable gravy and spread leftover rice.
- Now sprinkle few fried cashew nuts and chopped coriander leaves.
- Cover the vessel using a lid and cook the biryani on low flame for 10 to 15 minutes.
- After 15 minutes your Veg Biryani is ready to serve, serve hot with raita.
