  16. You need 1 tsp of Red Chilli Powder.

  19. Prepare 1 tsp of Garam Masala.
  20. You need as needed of Salt.
  21. You need 1 tbsp of Butter.
  22. Prepare 1 tbsp of Lemon Juice.
  23. Prepare 1 tsp of Coriander Leaves.

Here, I have made in gravy form which is simply cooked in tomato gravy. The curry is very mild, not too spicy and basic. But what is spicy chettinad egg masala curry without the spice. Though the list looks long and exhaustive, it is not.

  1. Boil the eggs. Remove the shell and make slits on it. Set aside..
  2. In a cooking pan, heat oil. Add red chillies, fennel seeds, cumin seeds, black pepper, star anise, cinnamon and cloves and fry. Add onion and fry till light golden. Add tomatoes and salt and fry till the tomatoes are soft and mushy. Cool it. Add it to a blender and blend to a smooth paste. Set aside..

  5. Add the ground paste and little water and let it come to a boil..
  6. Add chilli powder, coriander powder, turmeric powder and garam masala and saute for a minute or two. Add boiled eggs. Saute for 2 to 3 minutes. Try to insert the masala in the slits. Add little butter and off the flame..
