Luchi ghoogni instructions
- Knead a soft dough for luchi or Puri.
- Boil the peas adding a part of salt turmeric powder,onion and garlic.
- Heat oil in a pan and temper Cumin seeds, red chilli, whole garam masalasand bay leaf.
- Add ginger garlic paste and saute.
- Add onion chopped and saute well adding salt and turmeric powder.
- Add rest of the masalas and tomato saute till oil separates.
- Add the boiled chana and chana masala mix well.
- Add sugar and boil.
- Now roll puris of the dough and fry well.
You can have this ghugni, just as is, with some chopped onion and tamarind chutney sprinkled over. Or you could pair it up with some gorom luchi (fried flatbreads).
