  1. Boil the eggs and remove the shells from the boiled eggs and set aside..
  2. Wash the spinach leaves and then blanch the washed spinach leaves.For blanching the spinach, boil some water in a pan add the leaves to the boiling water and let it boil for a minute. remove from heat and dunk the leaves in cold water for few minutes and then Drain the water..
  3. Puree the blanched spinach along with green chillies.Meanwhile finely chop onion and tomatoes..
  4. Heat oil in a pan.u may also add a tsp of ghee here for the aroma and flavour, Add jeera first and then rest of the dry spices except the garam masala,dhania masala and turmeric..
  5. Once the above spices are fried a bit,add ginger garlic paste,tomatoes,and onions saute it nicely until they are soft and mashed,add salt, turmeric powder, coriander masala and garam masala, cover with the lid and leave it to cook for sometime u might need to add little water to keep them moist and not burn..
  6. Then add the pureed spinach along with 1/2 cup water or more depends on the thickness of the gravy u may need, but don't make it to thin or watery. Let it cook for a couple of minutes, at this point of time you can check on the spices by tasting a bit and add if you feel some spice or salt is less (which I'm sure everyone does to chk on the taste 😀).
  7. Now slit the boiled eggs into 2 and slide them in the curry.let the gravy simmer for 5-10 minutes and remove from heat.Palak anda gravy is ready to be served with rotis, naan or rice..
