- It's 500 gms of chole.
- It's 3 of Medium sized onions.
- Prepare 1 of garlic knob.
- It's 1 inch of ginger.
- It's 3-4 of cloves.

- It's 5-6 of black pepper.
- You need 2 of Bay leaves.
- You need 2 inch of cinnamon stick.
- Prepare 1 gram of mace.
- You need 1 gram of nutmeg.
- You need 1 teaspoon of cumin seeds.
- Prepare as required of Oil.
- It's as per taste of Salt.
- You need 1 teaspoon of Red chilli powder.
- You need 1 teaspoon of turmeric powder.
- It's 2 teaspoons of coriander powder.
- You need 1 teaspoon of garam masala powder.

- It's For of Puri.
- Prepare 2 cups of flour.
- You need 2 teaspoons of carom seeds.
- It's 2 Tablespoons of refined oil.
- It's as required of water.
- It's as required of Oil for frying.
Chole puri instructions
- Soak the chickpeas in water for 8-10 hours. Then drain the water and add it to a pressure cooker and add 4 cups water and some salt to it..
- After 5 to 6 whistles on medium flame, putt off the flame..
- Mash the chickpeas slightly with your hands..
- Heat oil in a pan and 1 onion to it..
- Now take a jar and add remaining onions, garlic, ginger, garam masala(exept cumin seeds and bay leaves) and fried onions to it and grind...
- Now add cumin seeds and bay leaves to the oil and when they starts crackling add that paste to it...
- Now add salt red chilli powder, coriander powder, turmeric powder and garam masala powder to it and mix well...
- Keep stirring it and fry it for 2-3 minutes till the oil starts separating...
- Now add the chickpeas to it and mix well.
- Cook it for more 5 minutes then add curd and water(if needed)...
- Cover the pan and cook for 10-12 minutes on a very low flame...
- When the gravy thickens put off the flame and take it out in a serving bowl and garnish it with some ginger and green chillies....
- For puri, add flour, carom seeds, salt and oil in a mixing bowl...
- Knead a soft dough of it and keep it covered for 5 mins to rest...
- Now make small balls of it and roll them evenly from the centre.. (Puri should not be too thick or thin).
- Now heat oil in a kadhai on a medium high flame..
- Now slide the puri carefully to the hot oil and fry...
- Take it out and place it on a tissue paper...
- Make all your puris like this...
- Now serve your chole puri with achaar.
