Steamed muthiyas step by step
- Wash, peel and grate the bottle gourd..
- In a mixing bowl, add wheat flour, besan, ajwain, asafoetida, Cumin seeds, coriander powder, oil, turmeric, red chilli powder, sugar/powdered sugar, a handful of coriander leaves, citric acid,salt and the grated lauki, mix everything well.
- Knead a dough,no adding water, the lauki releases water and is much sufficient to knead the dough. Nor stiff nor too loose.(medium).
- Apply oil on your palms and make a cylindrical roll from the dough. Add water in the lower vessel and keep a strainer, grease an oil over the strainer and keep the rolls to steam, with the lid closed,, if u have a steamer,u can use that. Steam for about 20-25mins on medium flame.. check after exact 2mins with a knife/fork inserting in the roll, if it comes clear then switch off the flame. If not then cook for more 10 mins..
- After cooling completely,cut into thin slices..
- Take a pan, add oil,let it splutter, add cumin seeds, sesame seeds, coriander leaves, red dry chilli and add the steamed muthiyas in and mix well. Cook for 3-4mins on low flame, switch off drizzle some lemon juice, coriander leaves or grated coconut..
