- Prepare 1/4 tsp of turmeric powder.
- You need 1 tsp of garam masala powder.
- You need 1 tsp of amchur powder.

Besan kachori step by step
- Mix all the ingredients for dough and rub this mixture between your palms to make bread crumbs like texture..
- Then make a soft dough by adding water. Don't over knead the dough at this time.Let it rest for 1/2 hour, meanwhile make stuffing for kachori..
- Dry roast saunf,black pepper,cloves and coriander seeds,then make a coarse powder and keep it aside..
- Heat oil in a pan..add jeera and black pepper coriander masala mixture,give it a stir,add heeng,ginger and green chillies,cook for few seconds then add besan and roast it till golden brown..
- Now add red chilli powder,coriander powder,amchur,sugar and salt. Mix it well..
- Roast the mixture till you get the nice aroma of roasted besan or for 1-2 minutes..
- Stuffing is ready. Keep aside..
- Now by adding 1 or 2 tsp oil in dough,knead the dough for 1-2 mins..
- Take a lemon size portion from dough and make make a small bowl like shape from this dough ball and stuff it with around 1 tbsp of besan mixture and combine all the corners of the dough and make a round ball. Press it with light hands and make a small disc. Don't roll it with rolling pin..
- Heat oil in a deep wok. Keep the flame on low medium. Fry the kachoris till crisp and golden brown. Serve hot with your choice of chutney sauce πππenjoy ππ.
