Sooji payesh. Sujir Payesh or Rawa Kheer or Semolina Milk Pudding is a quick and delicious dessert, where fine semolina is cooked with milk, sugar and raisins. Lately I have been posting some long and somewhat difficult recipes. Sujir Payesh is a very popular dessert come evening snack among the Bengalis.

Ingredients of Sooji payesh
- It's 100 gm of sooji.
- It's As needed of ghee.
- It's 4 pieces of white rock sugar.
- Prepare 3 cup of milk.
- You need 1/4 teaspoon of cardamom powder.
- Prepare 1 tbsp of dry fruits.
Sooji is semolina and Halwa is sweet porridge or pudding. It's prepared all over India and has several different names. Rava Halwa, Kesari Bhath, Sajjige and Shujir Payeshare few of those names I am familiar with. Durga Puja is a very big occasion for all Bengalis.
Sooji payesh instructions
- Sooji is fried in a pan with ghee in low flame.
- When Sooji become light brown add milk, rock sugar and stir.
- Stir with cardamom powder and dry fruits..
- Sooji payesh is ready..
This Sujir Payesh is a very tasty sweet dish. It is more of Payesh or Kheer than Halwa aka Halua. Basically, while making Doodh Sooji, we boil Semolina with a good amount of milk to make a semolina porridge. It is not as rich as Sooji Halwa, instead, it is comforting.
