Appi payasa or poori payasa. This post of appi kheer has emerged as reciprocal of your request. The key ingredient for this appi kheer is poori or maida biscuit prepared from scratch using maida or rava. I referred an authentic recipe book and made it using maida but you can take liberty of preparing it through rava with little or no maida flour.
Made with pieces of poori fried in oil , immersed in hot milk to which sugar , cardamom powder and saffron are.
Appe Payasa is an authentic recipe from the regions of Karnataka and is prepared using small bite sized appe, made of maida or rava.
Appe is a poori made like a crispy biscuits prepared commonly with chiroti rava or fine sooji.

Ingredients of Appi payasa or poori payasa
- It's of To make poori dough!!.
- Prepare 1 of cup-chiroti rawa.
- Prepare 1/2 of tea spoon-sugar.
- Prepare 1/2 tea spoon of -oil.
- You need 1/4 of th cup -water.
- It's of To make payasa.
- You need 1 of litre-whole milk.
- It's 3/4 of th cup-sugar.
- It's of Dry fruits (Cashew nuts,badam,raisins,).
- It's of Ghee (to fry dry fruits).
- Prepare 5-6 strands of Saffron soaked in hot milk.
- Prepare of Cardamom powder.
One can take the liberty of preparing the biscuits with maida too. Appe are usually prepared as small pooris and later broken into small bite-sizes. . Appi payasa is one of the popular sweets prepared in Karnataka. Thin puris of semolina are made, broken and boiled in milk with sugar and garnished with dry fruits.
Appi payasa or poori payasa step by step
- In a mixing bowl take chiroti rava/fine rava, 1/2 tsp sugar, 1/2 tsp oil and mix it slowly by adding water until you get firm dough. Cover it and let it rest for at least 2hrs. Add milk in a heavy bottom pan and let it boil on a low flame until it reduces to 3/4th of its quantity. Meanwhile heat oil in a kadai and start making pooris by first kneading the dough for 2mins and dividing it into lemon sized balls.Take one ball of dough, apply some oil on it(so that it won’t stick to the surface.).
- And roll it thin(like a thin chapati/tortilla) on a flat surface, cut it into triangles, and poke it with a fork(this helps it to remain flat during frying). Take each triangle at a time, fry till golden brown..
- Now make small pieces from the fried pooris then when milk is reduced to 3/4th of its quantity, add the pieces of pooris to the milk and let it boil for 5 mins. Now add saffron soaked in hot milk and stir it, then add sugar and stir it properly. Taste it, if necessary add more sugar and switch off the flame..
- To prepare cardamom powder take few cardamom and remove the cover and put in hand pounder along with little sugar and pound it as shown below..
- Transfer it to a serving bowl and garnish it with your ghee fried cashews, raisins, badam and cardamom powder..
