Kothu chapathi. Egg Kothu Chapathi is one of my recent tries. I wanted to try the hotel style kothu parotta recipe…it is one in my totry list since long. Recipe for kothu parotta made with whole wheat atta chapati.

Ingredients of Kothu chapathi

  1. You need 4 of Chapati, cut into strips.
  2. It's 1 cup of Mutton or chicken, cooked and shredded.
  3. You need 2 of Eggs scrambled.
  4. Prepare 2 of Onion sliced.
  5. Prepare 1 of Tomato chopped.
  6. It's 1 tsp of Ginger garlic paste.
  7. It's 1 tsp of Chilli powder.
  8. You need Pinch of Turmeric powder.
  9. Prepare 1/2 tsp of Garam masala powder.
  10. You need As per taste of Salt.
  11. Prepare As required of Coconut oil /refined oil.
  12. Prepare 1 tsp of Pepper powder.
  13. Prepare 1 tsp of Fennel powder.
  14. You need Few of Coriander leaves.
  15. It's Few of Mint leaves.

Kothu chapathi step by step

  1. Cook chicken or mutton in a pressure cooker adding turmeric, salt, pepper powder and when cooked shred them into small pieces..
  2. Heat oil in a pan saute onions till golden brown. Add tomatoes, cook till it turns mushy now add ginger garlic paste and cook till raw smell disappears, next add some mint leaves and saute till you get a nice lovely aroma..
  3. Tip in chilli powder, turmeric powder, pepper powder and saute. Now add shredded chicken or mutton. To this add 1/2 cup water and close the lid for 2 mins on low flame..
  4. Open the lid and tip 1/2tsp garam masala powder and give it a nice stir..
  5. Finally add in chapathi strips, eggs to the chicken mixture along with a big pinch of fennel powder, few coriander leaves and mint leaves then mix thoroughly and close the lid for 1min and turn off the flame and serve hot..

But you can also try adding salna or any non-veg kurma curries while preparing kothu roti. I always like dry version, so i just skip curry. Veg kothu chapati is minced/chopped chapati sautéed in a spicy vegetable mix.
