  2. It's 2 of Medium sized Potatoes.
  3. Prepare 2 of Onions (in paste).
  4. Prepare 1 tsp of Garlic paste.
  5. You need 1 tsp of Ginger paste.
  6. It's 2 pcs of Tomatoes (paste).
  7. You need 1 tbsp of Coriander Powder.
  8. Prepare 1 tsp of Cumin powder.
  9. It's 1 tsp of Turmeric powder.
  10. It's 1 tsp of Red chilli powder.
  11. It's of Salt.
  12. Prepare 1/4 tsp of Garam Masala.
  13. It's 2 tbsp of Cilantro for garnishing (chopped).
  14. You need 4 tbsp of Vegetable Oil.
  15. Prepare 1 of Bay leaf.

Egg Potato Curry step by step

  1. Boil eggs.
  2. De shell eggs n make one or two cut in eggs in opposite sides.. .. This process help to absorb spices into egg..
  3. Cut potatoes into cubes not very small in size, wash them..
  4. Take a heavy bottom woke, heat two tbs oil, Now fry cubes potatoes till light brown. Keep aside..
  5. Now fry eggs.. Sprinkle lil bit salt.. till light brown, keep aside..
  6. Now add remaining two tbs oil.. Heat, temper one Bay leaf, add onion, garlic, ginger paste, fry for two in high flame, add tomato paste.. Stir continuously.. B careful.. Should not burn..
  7. Add all dry spices except garam masala.. Fry till spices start to release oil..
  8. Add fried potatoes, mix well, add one glass water, do flame medium. Cook with lid till potatoes gets tender..
  9. Open the lid.. Add eggs, if u need more gravy add half cup water, cook for five-minute..
  10. Now off gas oven. Sprinkle garam masala, cover the lid. Keep it for five-minute..
  11. Open lid.. Sprinkle cilantro..
  12. Serve with hot steamed rice or bread..
