Ingredients of Puri Chole Masala
- You need 2 cups of Chickpea (Safed Chole).
- It's 1 of no. Tea bag.
- You need 2-3 pieces of Bay leaves (Tej patta).
- Prepare 3 cloves of Garlic.
- You need 3 pods of Black Cardamom.
- It's 1/2 teaspoon of Bakingsoda.
- It's to taste of Salt.
- You need as needed of Water to boil chole.
- Prepare 1 teaspoon of chole masala.
- Prepare 1 tablespoon of Pomegranate seeds powder (or whole seeds).
- You need 1 tablespoon of Coriander powder (sukha dhaniya) (or whole seeds).
- It's 1 tablespoon of Roasted cumin seeds (or regular cumin seeds).
- You need 1 teaspoon of Black Pepper powder.
- You need 1 tablespoon of Kala namak (Black salt).
- It's 1 teaspoon of Red chilli powder.
- You need 1 teaspoon of Cinnamon Powder (or cinnamon sticks).
- It's of assembling chole ingredients.
- You need 1 of medium Onion,chopped.
- It's 1 of medium Tomato, chopped.
- It's 1 tablespoon of Chopped Ginger.
- Prepare 2 tablespoon of Chopped cilantro leaves.
- Prepare 2 tablespoon of Oil.
Chole bhature (Hindi: छोले भटूरे) is a food dish originating from northern India. Known as "Halwa Puri" in Pakistan, it is a combination of chana masala (spicy white chickpeas) and bhatura/Puri, a fried bread made from maida. There is a distinct Punjabi variant of the dish. The dish is also very popular in Pakistan as a breakfast meal.
Puri Chole Masala step by step
- A night before- clean, wash and soak chole overnight. Soaked chole all puffed up. Assemble all the ingredients needed to boil chole. Drain soaked chole water and wash it under clean tap water..
- Add chole to a pressure cooker and add all the ingredients one by one. Pressure cook for nearly 20 minutes or until chole are soft and tender. Keep it aside..
- CHOLE MASALA Assemble all the chana masala ingredients. Leave these four out - black salt, red chilli powder, cinnamon powder and roasted cumin seeds.....
- Transfer all the spices to a pan and on a low flame dry roast all of the spices till they start omitting their aroma. Be careful not to burn the spices. Keep them aside..
- ASSEMBLING CHOLE Final step is to assemble the chole. In a kadhai heat oil, add onions, ginger and saute for 2 minutes on a medium flame. Mix in chopped tomatoes, salt and mix till they are fully blended..
- Cover and cook for 2-3 minutes till tomatoes are soft and tender. They will look like this - all mushy. Mix in the roasted dry spices and the left out 4 dry spices - black salt, red chilli powder, cinnamon powder and roasted cumin seeds.....
- And give it a good mix. Add 1/4 cup water and bring it to a boil. As the oil starts to separate.. Mix in boiled chole... And cook for another 4-5 minutes on a medium flame..
- Bring it to a boil, add chopped cilantro leaves and mix.. Delicious and mildly flavored chole are ready. serve with puri.. any shape of ur choice.. curd and salad... Enjoy endlessly.....
