  1. Prepare 250 g of Italian Arborio Risotto.
  2. You need 1 l of Veg Stock.
  3. Prepare 1 of Harliquin Squash.
  4. Prepare 2 of Brussel Sprout Tops.
  5. It's 100 g of Mushrooms.
  6. It's Half of Califlour.
  7. Prepare 1 of Onion.
  8. Prepare 3 Cloves of Garlic.
  9. You need of Mixed Herb to Season.
  10. It's of Salt.
  11. It's of Pepper.
  12. Prepare of Olive Oil.

Seasonal Veg Risotto 🥘 instructions

  1. Chop up Harliquin Squash into small cubes, dice up the onion, chop the califlour, mushrooms, garlic and brussel spout tops.
  2. Fry the cubed squash and diced onions in the olive oil til they soften.
  3. Add rest of veg and fry til they start to cook.
  4. Add the risotto rice and fry gently in a bit more oil.
  5. Add veg stock a few hundred ml at a time and wait for it to soak into the rice before adding more. Think this is where most of the flavour come from!.
  6. Keep adding stock until rice starts to get soft and sticky! Very much not an exact science which is great when you're winging it like me!.
