- You need 1.5 cups of whole wheat flour.
- It's 1/3 cup of finely grated carrot.
- You need 1/3 cup of finely chopped cabbage.
- You need 1 cup of finely chopped spinach leaves.
- You need 4-5 tablespoon of finely chopped parsley/coriander leaves.
- You need 1 teaspoon of carom seeds/ajwain.
- You need 1 tablespoon of salt.
- You need 1 tablespoon of red chilli powder.

- You need 1/2 tablespoon of garam masala powder.
- You need 1 tablespoon of roasted cumin powder.

- Prepare as needed of Warm water.

- Add the flour in a large mixing bowl.
- Add the salt, carom seeds and the dry spices in the flour and mix well.
- Now add the veggies and greens.
- Mix all the ingredients roughly.
- Start adding enough water to knead a soft dough.
- Once done, add the oil and knead for 1-2 minutes more.
- Tuck the dough into a ball and place it covered for 15-20 minutes.
- Heat a tawa/ girdle and divide the dough into medium sized balls.
- Using some flour, start rolling each and toast them well on the tawa by using some ghee in the process.
- Delicious mixed Vegetables Paratha are ready to be relished.
- Serve while warm accompanied by pickle, curd, etc.
- Tip: you may choose to use a combination of healthy flours with whole wheat too.
