Til gul poli is a special Maharastrian dish made on Sankranti.
It is a flat bread stuffed with a filling of til or sesame seeds and gul or jaggery.

Ingredients of Til Gud poli
- Prepare 1 cup of wheat flour.
- Prepare 1 cup of maida/All purpose flour.
- It's as needed of Warm Water to knead the dough.
- Prepare 2 tbsp of Oil.

- Prepare 1/2 cup of sesame seeds (til).
- It's 1/2 cup of roasted peanuts (shengdana).

- Prepare 1/4 tsp of cardamom(elaichi) powder.
- It's Pinch of nutmeg and dry ginger powder.

Til Gud poli step by step
- We will first prepare the dough. In a large mixing plate,mix wheat flour, maida and salt.Heat a tbsp oil in a small pan. Make a well in the middle of flour and pour this hot oil into it. Mix well and add warm water little by little and knead the dough. The dough should not be very soft but little stiff. Add little oil and cover the dough and keep it aside for 1 hour..
- Now we will prepare stuffing.In a pan,on low heat dry roast the sesame seeds till it's colour changes to light brown and you get a nice aroma. Transfer it on a plate. Dry roast grated dry coconut. Transfer it to the same plate which contains til. Add roasted peanuts,cardamom powder, nutmeg and dry ginger powder to this same plate and mix well..
- Transfer all the ingredients in the plate after it cools to a mixer. Now grind this mixture to a coarse powder. Do not over grind to fine powder. Now add grated Jaggery to this and grind it once in pulse mode.The whole mixture is in coarse powder. The stuffing is ready..
- The dough would have rested well by now.Take a small ball of dough. On a rolling plate dust some dry flour and place this small ball of dough on it. With the help of rolling pin roll it into a small poori. Now add about 1 tbsp of prepared stuffing to it..
- Close it by covering the edges so that stuffing does not come out. This is just like parata.Then dust some dry flour and roll it to a circular shape Roti. These poli should be rolled thin..
- Heat Tawa on medium flame.Place the poli on the tawa and cook it till golden brown on both sides. Put ghee for cooking on both sides..
- Delicious Til Gud poli is ready.Serve it on plate,top it up with little ghee. Enjoy hot Til Gud poli..
