  1. Boil the potatoes, once cooled, peel and mash them and keep aside..
  2. Meanwhile, heat a kadhai and add oil. Once the oil is hot add mustard, cumin, curry leaves, channa dal, urad dal, crushed coriander seeds. (Careful not to burn any dals so preferably cook in slow to medium flame once youve added the mustard seeds)..
  3. Then, add ginger and garlic and sauté them until they lose their raw smell. Now add onion and fry them until light pink/ soft..
  4. At this stage add turmeric powder and mix..
  5. Time to add the potatoes and salt. Mix everything until all the mixture combines well..
  6. Garnish with Coriander and serve as a side dish or for stuffing inside Dosas. I also use this mixture to make Vada Pavs. Only I add more garlic and no channa dal..
