Recipe: Delicious Sooji (semolina) halwa

Sooji (semolina) halwa. This recipe for sooji ka halwa ("made with semolina") is a popular version with many families because it is one of those simple but very satisfying desserts that hits the sweet spot every time. This Sooji Halwa is made with semolina, sugar, ghee and water (and/or milk). Addition of cardamom powder, nuts and saffron is optional, but recommended as it enhances the flavor and nutrition.

Sooji (semolina) halwa Heat and stir until halwa reaches the consistency of thick mashed potatoes. Sooji halwa is often made in bulk on festive or religious occasions. Ingredients of Sooji (semolina) halwa

  1. You need 120 gms of semolina / barik suji (1 tea cup).
  2. It's 1-1 1/2 tbs of ghee.
  3. You need 50 gms of / half tea cup jaggery powder.
  4. Prepare As needed of Hot water (double the amount of suji i.e. 2 tea cups).
  5. You need 5 of cashews chopped (slightly roasted in ghee).
  6. Prepare 3 of almonds finely chopped (slightly roasted in ghee).
  7. Prepare As needed of Few raisins.
  8. You need 2 of cardamoms powder.

Use a fine variety of sooji and not the coarser variety. Sooji is used in northern parts of India and Pakistan to make sooji halwa. There is no concrete difference between sooji, rava and semolina. The only difference is in the usage of the three names.

Sooji (semolina) halwa instructions

  1. In a non stick pan, add ghee.
  2. Dry roast the suji on low heat till it changes colour. Keep stirring continuously for it not to get burnt. Nowadays you get pre roasted suji in stores. This reduces the roasting time.
  3. When the ghee gets hot add the suji and mix well.
  4. In the meantime boil two tea cups of water.
  5. Now add the jaggery, cardamoms, raisins, roasted cashew and almonds in the semolina.
  6. Add the hot water and mix well till you get the desired consistency on low heat.
  7. Sweetness adjusted according to one’ taste turn off the gas when you pour the hot water in the pan. It avoids stuttering and the hot stuff coming on you. Once you pour the hot water turn the gas on again whatever measurement you take for the suji, the jaggery should be approximately half of it and water double of it you can use milk instead of water or use half milk and half water.
