Ingredients of Vegetable korma

  1. You need 2 cups of mixed chopped veggies.
  2. Prepare of Cauliflower florets.
  3. You need of French beans.
  4. Prepare of Carrots.
  5. It's of Green peas(matar)fresh or frozen.
  6. Prepare of Potatoes diced.
  7. You need 1/4 cup of soya bean nuggets.
  8. You need 1/2 cup of mushrooms.
  9. You need 1/2 cup of paneer.
  10. It's 1 1/2 cup of fresh coconut grated.
  11. It's 1/2 cup of coriander leaves.
  12. It's 3 of green chilles (can adjust according to ur taste).
  13. It's 10 of kaju.
  14. You need 1 tbsp of poppy seeds (khus khus).
  15. You need 2 tbsp of sesame seeds (til).
  16. You need 5 of garlic cloves.
  17. It's 1 inch of ginger.
  18. It's 1 tbsp of coriander seeds (Dhaniya).
  19. Prepare 1/2 tbsp of fennel seeds (badisoap).
  20. You need 1 tsp of Turmeric.
  21. Prepare 2 of green cardmom (ealichi).
  22. You need 2 pieces of cinnamon sticks(dalchini).
  23. It's 5 cloves of (lavang).
  24. You need 3 tbs of oil.
  25. It's 2 tbsp of ghee.
  26. Prepare as needed of Vegetable stock or water.
  27. Prepare leaf of Bay leaf.
  28. It's 1 cup of chopped onion.
  29. You need 1/2 cup of chopped tomatoes.
  30. You need To taste of Salt.
  31. You need Handful of coriander leaves for garnishing.

Vegetable korma step by step

  1. For masala paste : heat 1 tsp oil in pan add coriander seeds, fennel seeds, ginger, garlic,green chilles, sesame seeds, cardmom, cloves, cinnamon, fry this for 5 mins then switch off the flame add coconut and coriander leaves,turmeric, add water as required and make fine paste.
  2. Soak poppy seeds and kaju in water for 20 mins & make paste of this.
  3. Boil all the veggies with little salt.
  4. Soak soya bean in water for 10 mins, squeeze water and keep aside.
  5. Heat oil & ghee in wok add bay leaf next add chopped onion fry it till translucent then add tomatoes fry till oil seprates next add masala paste fry well,then add kaju, khus khus paste & boil it for 5 mins.
  6. Next add boiled veggies, vegetable stock, salt, add soya bean stir & give it a nice boil thn add paneer & mushroom.
  7. Cover and cook for 7- 10 mins switch off the flame.
  8. Garnish with coriander leaves and fried kaju.
  9. Note : In this recipe i have used green chilles, though u can also add red chilles.
  10. If vegetable kurma gravy looks thick add some more water the consistency should be medium neither thick nor thin..
