Puran poli modak step by step

  1. Soak bengal gram for 2-3 hours.
  2. Pressure cook them with water to make them very soft..
  3. In a mixer grinder grind this cooked dal to make a smooth paste..
  4. You can add little water or milk to grind them nicely..
  5. Take out in a heavy bottomed pan..
  6. Add 2 tbsp of ghee and cook in low flame..
  7. Stir constantly otherwise the mixture will stick to the pan..
  8. Add 3 tbsp of sugar and 2 tbsp of milk powder..
  9. Mix well and continue to cook..
  10. When a nice ghee roasted aroma starts emitting from the mixture, add 2 cups of hot water and whisk vigorously to mix the dal with water..
  11. When the mixture starts boiling add 1 cup of rice flour and whisk..
  12. Cover and cook in very low flame for 3-4 minutes..
  13. It will form a soft dough of rice and dal. Be careful not to form small lumps..
  14. Remove in a plate and let it cool for sometime..
  15. In the meantime with little water melt the jaggery by heating up..
  16. Chop pistachio with a chopper and add to the melted jaggery..

  19. Take a small lime size portion of the dough, knead a little to smooth and make a patty by pressing in between palm..

  28. Cover and steam for 10 minutes. Modaks will be cooked completely..
  29. Take out the pan from the steamer, let it cook for 5 minutes and then transfer these modaks in a serving plate..
