- It's 2 cups of Maida / all purpose flour.

Pyaz Aaloo Ki Khasta Kachori / onion,potato step by step
- Ingredients:.
- Mix together maida, salt, ajwain and oil in a bowl..
- Add little water at a time and knead soft and smooth dough..
- Cover the dough and let it rest for 20 minutes..
- Heat pan at medium heat and add oil..
- Add cumin seeds and hing. When seeds are crackling add potatoes and cook for 2 minutes..
- Add besan and mix well and cook till besan is nicely roasted..
- Add onion, garlic and green chilli and cook for 4-5 minutes..
- Add turmeric powder, red chilli powder, coriander powder, fennel seeds powder and salt and mix well and cook for 3-4minutes..
- Add lemon juice and sugar and mix well. And cook for 4-5 minutes..
- Stuffing is now ready. Off the flame and let it cool down for some time..
- Now pinch small portion from the dough and roll into round shape. Repeat the process until the entire dough is utilised..
- After this flatted the dough ball with your fingers giving it a bowl shape. Stuff this with 2 tsp stuffing and roll back to round shape..
- Press it gently to give kachori shape. Repeat the process with rest of the dough balls as well..
- Heat enough oil in a wok and slide the rolled kachoris to medium heat oil..
- Place as many kachoris as possible and deep fry until they puff up and get golden brown and crispy from all sides..
- Drain out the fried kachoris on kitchen paper towels and fry the rest..
- Appetizing and Mouth Drooling Crispy Aaloo Kachoris are ready..
