- In two bowls, soak the raw rice and pitted dates separately for at least 2-3 hours. In a grinder, grind together the soaked rice and dates adding very little water. Transfer it into a bowl. Add the grated coconut, jaggery syrup, cardamom, salt, & baking soda and mix well. Leave it aside for 30 mins..
- Heat the paniyaram pan. Pour oil/ghee into each hole until 1/2 full and allow the oil to be heated. Carefully pour a spoonful of the batter into each hole. Cook until dark brown, turning sides as needed. Remove the cooked appams carefully using a skewer and drain on paper towels. Repeat the process with the remaining batter.
