Ingredients of Khoya Malpua Rabri

  1. Prepare 100 gms of mawa or khoya.
  2. You need 1 cup of all purpose flour.
  3. You need 1/2 cup of semolina.
  4. Prepare 3 tbsp of corn flour.
  5. You need 1 tbsp of fennel seeds.
  6. Prepare 1 cup of sugar.
  7. It's 1/2 cup of water.
  8. It's 1 tbsp of cardamom powder.
  9. You need 10 of saffron strands.
  10. It's 1/2 litre of full fat milk.
  11. It's as required of Oil or ghee for frying.
  12. Prepare as required of Pistachios for garnish.

Khoya Malpua Rabri instructions

  1. Firstly for rabri making, take a vessel bottom thick add milk and cook it till first boil comes then at medium flame stir the milk in between and add 2 tbsp khoya in it for quick thicker the milk and cook it for at least 10 to 15 minutes till the milk reduces and having rabri consistency, add cardamom powder and 1/2 tbsp fennel seeds(optional) and add little sugar too and cook well. Our rabri is done and let it be cool..
  2. Now for sugar syrup take a pan add sugar and water and heat it and also add 1/2 tbsp cardamom powder and cook it till one string consistency sugar syrup..
  3. Now for malpua batter, take a big bowl add khoya in a crumble form, then add all-purpose flour, semolina and cornflour and mix all well. Now add little cardamom powder, fennel seeds and make a batter with the help of water also add saffron strands dissolved in milk. And make a pouring consistency batter..
  4. Now take a pan add oil in it and heat at low medium flame. Now with the help of cradle pour the batter into the oil and let it become upwards and then flip the side and make flame high and cook it till golden and crispy from sides. And before dipping press it with tissue to remove excess oil and then dip into the warm sugar syrup and remain there in for 5 minutes..
  5. And then finally arrange them on a serving plate with rabri and sprinkle some crushed pistachios on the rabri. Our yummy delicious dessert is ready to serve. Enjoy!.
